Ingredients :
- 4 ripped bananas (two for the dough and two to add in the end as topping)
- 2 table spoons of honey
- 250gr flour
- 2 eggs
- 1 pinch cinnamon
- 50gr butter
- 1 tea spoon baking powder
- 2 table spoons of fruit juice
Just soften the butter on the microwave, join the eggs, honey and juice and wip it a bit. Add 3 ripped bananas smashed by hand. Add the flour, cinnamon and backing powder. And fold it into an homogeneous dough.
Put it in a bread Form and into the oven at 180C for about 60min.
Still need to test a yogurt oat version, but this one is so yummy I don't want to lose it.
Banana bread II
Based on my mother's recipe (not really hers but God only knows where she got it from by now).
3 ripped bananas
80 ml olive oil (extra virgin or sun flower oil)
110gr cast sugar
2 eggs
200gr all purpose flour
3 small spoons of east
Pinch of salt
1 natuur yogurt
1 cinnamon stick or a pinch of powder cinnamon
Get all the ingredients into a blander.
I like to always add caramelized bananas on top.
Need to try a top bottom version and will let you know how it goes. 😉
