kaiserschmarn

Kaiserschmarn - the worst of this recipe is getting the name right. 😅
Best Desert I ever tasted in Munchen, Germany.

I would add that it is easy, looks yummy yet rustic so there is no goong wrong with the platting.

Ingredients:

6 eggs
400ml milk
200gr flour
2tb spoons of raisens
1tb spoon of sugar
1 packet of vanilla 
1 pinch of anis
1 pinch of salt
3 drops of lemon juice
1tb of rum (optional)

Final ingredients:
1 pinch of cinnamon per pancake
1 pinch of icing sugar per pancake
Enough butter to fry on a pan
Enough sugar to caramelize surface

Whipp all ingredients, but the egg whites together. 
Whipp the egg whites with the drops of lemon juice until stiff.
Join both into a soft dough, with care not to beat the air out of the egg whites.

In a frying pan put enough butter to cover the surface after melted.
Add a thin layer of the dough, about 0.5-1cm. 
Let it bake in low heat until you can see bubbles on the surface.
Add a spoon of sugar on the surface and flip the thick pancake over. It should break into pieces, that is part of the charm.
Let it bake until it caramelizes the surface below. Set a side and repeat with the remaining dough.
Serve with a drizzle of cinnamon and if you want to go the extra mile add icing sugar.
